POPPED WILD RICE, PEAR & BABY KALE SALAD
For the healthy enthusiasts here's a gorgeous and easy to make salad.

INGREDIENTS
3 T wild rice
2 ripe pears
1 punnet baby kale
3 T wild rice
3 T vegetable oil
2 T pomegranates
1 bunch mint
3 T vegetable oil
juice of 1 lemon
DRESSING
1/2 T sumac
juice of 1 lemon
1 t Dijon mustard
1 C Olive oil
alt & pepper
1 t Dijon mustard
First off we will start by popping the wild rice. Heat up a medium frying pan to high heat and add vegetable oil, allow oil to get hot then add wild rice. Stir and agitate wild rice, wild rice should start to puff up within 30 seconds. keep stirring till all rice popped then remove wild rice onto a paper towel to remove excess oil. season lightly
METHOD
So this one is extremely easy and packs such a fresh and vibrant flavors into the forgotten salad.

Next up is the dressing, simply place all ingredients in a jar and give a mighty shake. adjust acidity and seasoning to your liking. For the Salad cut the pear into thin sticks and pick mint, add into a salad bowl with remaining ingredients with wild rice, and yes use all the mint leaves! add a portion of the dressing. mix lightly with the tip of your fingers to ensure salad isn't bruised.
