PINEAPPLE, GINGER & CHILLI MOCKTAIL
Time: 15 minutes
1 bunch mint
1 pineapple freshly juiced
30 ml pomegranate molasse or Grenadine
1 red chili
2 T caster sugar
600 ml ginger beer
Stir well, then add pomegranate molasse, if not available, use grenadine.
This kick-ass punch is an easy and fresh way to liven up a sunny lunch or sneaky Sunday session, Start by Cutting and discarding the top & rind of the pineapple. Cut into 6 pieces and juice.
Next place 1 cup of ice in a tea towel and crush with a rolling pin or mallet then place ice in a jug. Now pick the mint leaves and squeeze the leaves lightly in the hand to release the flavors then add to the jug. Slice chili into 4 long strips and keep the seeds in for a nice kick, add to jug with caster sugar, pineapple juice & ginger beer.
