MAURITIAN FRIED BREAD
This lovely Mauritian snack is always a crowd pleaser and a chef pleaser for being quick, easy and delicious.

Cooking time: 4 minutes
2 red chilies
220g plain four
2 springs of spring onion
2 Teaspoon ground turmeric
2 cloves of garlic
1 teaspoon baking powder
Start finely chopping chilli, spring onion & garlic. Add this to a bowl with Plain flour, baking powder, turmeric & seasoning. Mix well then add tap water till you form ever so slightly runny batter that will still cling to food items.
Preheat deep Fryer to 180 Celsius
Slice bread to 2 cm thickness. Dip bread slices in batter till evenly coated and carefully place in fryer. Cook each side for 1 – 2 minutes until golden brown. Drain on kitchen towel paper and season lightly.
Serve with some chopped coriander & your favourite dipping sauce.
