MAURITIAN CORIANDER CHUTNEY
A tasty zingy condiment that is simple to make and sure to be a crowd-pleaser.
Juice of 1 lemon
2 bunches fresh coriander
1 ripe tomato
Salt & Pepper to taste
3 garlic cloves
3 green chillies (or more if you like it spicy)
Roughly chop coriander (including stalk, garlic & tomato. Place all ingredients in blender and blitz till smooth - adding a dash more lemon juice if required.
First off we want remove the skin from the tomato, bring a small pot of water to boil and prepare a separate ice water bath, in the meantime score the base of the tomato with a cross and blanch in boiling water for 30 seconds then transfer to ice bath. Peel of the skin then remove and discard the core.
Chutney should be bright green, spicy and full of zest.
Enjoy with your favourite meats and veggies or use it in a sandwich to add some spice to your life.
