1 bunch spring onion
1kg yellow split peas
3 red Chilies
1 Tablespoon cumin seeds
2 Teaspoon, baking powder
1 Egg white
Then add egg white and roughly 1 Lt of water and mix well, mixture should be quite wet. Leave the mixture to set in the fridge for at least one hour, this will allow the split peas to absorb the moister and become thicker.
In a grinder blitz Yellow split peas till it breaks down to a fine powder then place into a shallow bowl. Finely slice spring onion & chilies and add into bowl with baking powder salt and cumin seeds. Mix well
Pre heat your deep fryer to 170. Or place oil in a deep shallow pot. Once oil is up to temperature lightly shape Gato Pima into balls using three fingers or a teaspoon and place gently in the oil, make 12 - 15 at time. Cook each side for roughly 4 minutes until golden brown. Gato Pima should be crispy on the outside and light and fluffy on the inside.
